Sweet Potato Muffins


1 ¾ cups plain flour

½ cup brown sugar

1 cup raisins

2 tsp ground cinnamon

¼ tsp ground nutmeg

4 tsp baking powder

½ tsp salt

1 cup sweet potato (cooked, mashed)

2 eggs (lightly beaten)

½ cup milk

125gr butter (melted)


  1. Preheat oven to 180c. Line two muffin tins with 18 patty pans

  2. In a bowl, combine the flour, baking powder, brown sugar, cinnamon, nutmeg, raisins and salt.

  3. In a separate bowl, combine the eggs, sweet potato, milk and butter

  4. Pour the wet mix into the dry mix and using spatula, gently fold the mixture together until all ingredients are just moist.

  5. Fill each patty pan with mixture and bake in oven for 12-15mins (oven times may vary)
